Winemaker Notes:

Harvested on August 27, 2024 at a Brix of 23.5 and pH of 3.3. Whole-cluster pressed in our gentle bladder press and fermented in Flextank "Apollo" egg-shaped tanks. Slow fermentation and constant stirring via gas released in convection, extracting maximum flavors and enhancing aromatics.

Vineyard Notes:

We sourced the grapes for our Sauvignon Blanc from a neighboring vineyard in Amador. The 40+ year old vines grow in a cooler valley and are renown for producing intense flavored highly aromatic wines. Typically, all grapes are allocated to longtime buyers making it very difficult to secure, but we agreed to make wine for the owner in exchange for an allocation. He believed that we could make an exceptional wine. We waited patiently for a perfect balance between acidity and flavors.
